American Wagyu Lomo Saltado

Lomo Saltado is a traditional Peruvian dish that combines beef, chiles, onion, tomatoes, and french fries. Expand your palate by adding American Wagyu to traditional dishes.

  1. 1 lb. American Wagyu Flank Steak
  2. 2 Aji amarillo chiles OR 2 red/orange bell peppers
  3. 1 Onion
  4. 2 Tomatoes
  5. 3 Tablespoons soy sauce
  6. 2 Tablespoons balsamic vinegar
  7. Pinch of chopped parsley
  8. Salt and pepper
  9. 1 Cup french fries
  10. 1 Cup white rice

  1. Allow the American Wagyu Flank Steak to defrost in the refrigerator for 24-48 hours.
  2. Cook french fries and white rice.
  3. Slice chiles, onion, and tomatoes.
  4. Slice approximately 1 lb. of American Wagyu Flank Steak.
  5. Heat a cast iron pan to medium heat.
  6. Salt and pepper the steak and pan sear until desired doneness.
  7. Remove the Wagyu and allow the slices to rest.
  8. In the same pan add chiles, onion, and tomatoes.
  9. Add balsamic vinegar and soy sauce.
  10. Cook until the sauce has thickened and vegetables have softened. This should take about 5-7 minutes.
  11. Add steak slices to the pan.
  12. Add cooked french fries to the pan and mix together.
  13. Serve with white rice.
